Provisioning and Cooking Underway
Join Chef Vivian aboard her Compass 47, Ultima to learn the basics of organizing, buying, storing, caring and cooking food for crew and guests. Spend the first morning going over shopping lists, food storage in boats, and planning to feed 2-8 on week or more long passages. Discuss the best methods of packing a top loading fridge, what to do if you don’t have a freezer, and keeping your food fresh, and how to effectively prepare and cook meals underway.
The second half of the day will be hands-on training in the galley. You’ll learn how to sharpen, care for, and use knives, practicing techniques on cutting food to prevent injuries underway. Finally, everyone will get a chance to cook some of the original, fresh, and healthy recipes Vivian serves on board her offshore training passages. This two day workshop will help reduce the stress of shopping for dietary restrictions and allergies, feel more organized, and prepare your galley to churn out great meals to keep your crew happy.
